Cao lầu - Vietnamese noodle dish
There are so many upsides to working from home but as time passed I realised one day for example that I hadn’t left my house for 2 days! So I set myself a sort of framework to follow. Here are a few tips my team and I shared with each other and I found incredibly helpful.
Traveling in vietnam
My favourite vegan spots in Hoi An and Hanoi. I was surprised by how easy it was to be vegan in Vietnam, everything I tried was incredibly delicious. I fell in love with the food, the people and the landscape in the end I didn’t want to leave and will hopefully go back one day!
products i love and recommend
I often get questioned if, since being vegan, do I also only consume products that are sustainably produced, cosmetics that aren’t tested on animals etc. Here are some products that I genuinely love and think deserve a bit of attention.
garlic asparagus pizza bianca
Friday nights were always pizza nights at home when I was growing up. My mum always made the dough and sauce from scratch and then my sister and I helped out by slicing whichever toppings we wanted on top. I loved this tradition and always looked forward to cozy pizza nights.
thai inspired peanut quinoa salad
A fresh and quick salad with a really delicious and simple peanut sauce. If you have peanut allergies you could substitute the peanuts for cashews (if you can tolerate them). This is one of my favourites, I love to load it up with lots of lime juice and fresh coriander.
rhubarb crumble with nice cream
I love making this crumble. It's super quick and easy and doesn't require a lot of ingredients. You can replace the rhubarb with apples, blueberries, strawberries... I often use mixed frozen berries for example. If you want to make it extra delicious add some chopped chocolate bites on top.
