Thanksgiving Feast

Although Thanksgiving is, unfortunately, a very meat-based holiday. There are plenty of vegan alternatives. A few of my favourites include a green bean casserole, roasted cauliflower and sweet potato mash with marshmallow on top! Luckily Cauliflower is an incredibly versatile vegetable and its texture when baked is very satisfying. The cauliflower roast recipe was largely inspired by this amazing Hot for Food one. I added a few tweaks to make my own version.

When cutting through the cauliflower don’t expect it to cut into 100% solid steak-like shapes. It’s incredibly delicious and juicy even if it falls apart slightly!

Ingredients

Cauliflower Roast
1 large cauliflower
200 gr small potatoes, coarsely chopped
2 large carrots, coarsely chopped
2 large onions, coarsely chopped
1/3 cup vegan butter
3 garlic cloves
2 shallots, finely chopped
1 tsp nutmeg
1 sprig rosemary
2 tbsp cornstarch
1/4 cup water
1/4 cup plant based milk
1/4 cup tamari/soy sauce
1/4 cup maple/agave syrup
1/2 cup tahini
1 tbsp dijon mustard
2 tbsp nutritional yeast
1/4 cup vegetable stock

Green Bean Casserole
1 package frozen string beans
2 tbsp vegan butter
1 onion
220 gr mushrooms
1 mushroom bouillon
1 Oatly cream or other plant based cream
120 gr fried onions
1 tsp apple cider vinegar
1 tbsp coconut sugar
1 tbsp dijon mustard
1/3 cup pecans, chopped
1 tsp cornstarch

Brussel Sprout Cranberry Salad
100 gr brussel sprouts
2 - 3 tbsp maple syrup
1/4 cup dried cranberries
2 limes, juiced
2 tbsp agave syrup
1/3 cup quinoa, boiled
bunch of parsley

Marshmallow Baked Sweet Potatoes
1 large sweet potato
2 tsp cinnamon
marshmallow recipe


Cauliflower Roast
Cut the florets and most of the root from the cauliflower. Add to large oven proof tray. Chop the potatoes, carrots and onions coarsely, drizzle with oil and chopped rosemary. Lay around the cauliflower. Melt butter in saucepan with the finely chopped shallots and pressed garlic cloves. Add rest of ingredients to saucepan and let boil for 2 -3 minutes. Turn cauliflower upside down and pour a few spoonfuls of sauce over. Turn right side up and drizzle about 1/3 of the sauce, or until completely covered, over the cauliflower. Bake in oven at 190 degrees for 25 min. Then take out of oven and drizzle with a bit more sauce. Bake for another 20 min.

Green Bean Casserole
Defrost string beans by adding them to bowl and pouring boiling water over. Let sit for 10 min. Fry the onion and mushrooms in a large frying pan with the butter. Once onions are translucent add remaining ingredients, keep 60 gr of the fried onions to add to top of dish. Add the string beans to the pan and let simmer for a few min. Pour the mixture into an oven proof baking tray, add the remaining fried onions to the top. Bake in oven at 180 degrees for 10 - 15 min.

Brussel Sprout Salad
Add brussel sprouts to a baking tray and pour maple syrup over, make sure they’re all coated. Bake in oven at 180 degrees for 20 - 25 min. Boil quinoa. Add all ingredients to bowl once ready.

Marshmallow Sweet Potato Bake
Peel sweet potato, chop into medium slices and steam in steamer. Make marshmallow recipe. Add sweet potatoes to oven proof baking tray, mash with a fork. Once the marshmallow mixture is ready spread about 2 cm on top of sweet potato mash. Bake in oven at 180 degrees for 10 - 15 min or until it begins to brown.
