Spicy Mango Salad


I had this mango salad in Vietnam and like almost everything I had there I wanted to replicate it myself. The mangoes were so incredibly delicious and juicy there so it’s hard to compare to the ones found in the stores here. I added some tofu to it to make if a little more substantial but I think both are equally great.



2 mangoes
1 onion
3 garlic cloves
1 chili
Handful of basil
1/2 handful of mint leaves
1 lime, squeezed
1/2 tsp cinnamon
1/4 cumin
1/2 veggie bouillon
1/2 block of tofu


Finely slice the onion and chili and press the garlic, fry on pan with quite a bit of oil until the onion starts to brown. Grate the mangoes into a large bowl, squeeze the lime juice in, mix the basil and mint leaves into it. Remove 3/4 of the onion mix from the pan, slice the tofu into thin pieces and add onto pan. Add the veggie bouillon and cinnamon to the tofu and some extra oil if needed. Fry until tofu starts to brown. Serve in a bowl and add the onion mixture and tofu on top. Have a lime wedge on side for extra flavour.
