Chocolate covered cookie dough bites
These cookie dough bites are perfect if you're craving something sweet but also want it to have a good nutritional value. It is easy to find the ingredients used for them and I promise that you will use them over and over again for other recipes. Coconut sugar is a good substitute for brown or muscovado sugar and almond meal is great to use instead of panko breadcrumbs or in baking for example.
3/4 cup almond meal
1/4 cup oats mixed into oat flour
1/2 tsp vanilla
100 gr chocolate, cut down or in chips
200 gr chocolate, for melting
1/4 cup coconut sugar
3 tbsp raw cane sugar
1 tbsp maple syrup
1/4 - 1/3 cup melted coconut oil
Mix together the dry ingredients in a bowl. Melt the coconut oil and pour over the dry ingredient mixture in small segments, mixing in between, use as much coconut oil as you like without making the mixture too wet. Add the maple syrup in and finally the chocolate as well. Form little balls with the cookie dough. Melt the 200 gr of chocolate and dip the cookie dough bites into it, generously coating the surface. Let stand on the side and cool so the chocolate hardens.
It's seriously good to use the bites as toppings for ice cream or in a milkshake!
