Summer Rolls with Peanut Sauce

This recipe is super simple to make, don't let the rice paper intimidate you. Once you have the rice paper, which can be found either on amazon or in an asian market usually, you can just fill them with vegetables, tofu, fruit and whatever you like. I really like having the peanut sauce to dip them into but I've also had them with sweet chili sauce and just soy sauce.



Rice paper
1 red bell pepper
1 mango
1/2 cucumber
4-5 spring onions
2-3 carrots
1 avocado
1/2 handful of fresh mint

1 cup peanut butter
4 tbsp soy sauce
1/4 cup hot water
3 tbsp agave syrup
2-3 cm ginger root
1 garlic clove
1 lime, the juice

Slice the fresh vegetables and fruit into about 7 cm long thin bites and set aside. Pour some warm water into a rather deep disk which is about the size of the rice paper. Take the paper and soak in the water for about a minute or until it softens up and becomes translucent. Remove from water and put on plate, place the vegetables and fruit in the centre of the rice paper. I usually take one piece each in the beginning at least and 2 mint leaves. Fold the sides in on each other tightly. Then take the bottom half which is closest to you and fold over the filling tightly. Roll over the rest to secure everything.
